  • 50 g corn kernels fresh or frozen
  • 70 g avocado diced
  • 15 ml lime juice fresh
  • 10 ml olive oil extra virgin
  • 1 piece garlic clove minced
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 10 g fresh cilantro chopped
  • 100 g cooked brown rice
  • 0.25 teaspoon salt

  1. Rinse and drain the cooked black beans if canned.
  2. Dice the red bell pepper and avocado into small cubes.
  3. Mince the garlic clove finely.
  4. Heat olive oil in a skillet over medium heat.
  5. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  6. Add diced red bell pepper and corn kernels to the skillet and cook for 3-4 minutes until slightly tender.
  7. Add ground cumin, chili powder, and salt to the skillet and stir to combine.
  8. Add the cooked black beans to the skillet and cook for 2 minutes to warm through and blend flavors.
  9. Remove skillet from heat and stir in fresh lime juice and chopped cilantro.
  10. In a serving bowl, place cooked brown rice as the base.
  11. Top the rice with the black bean mixture.
  12. Add diced avocado on top as garnish.
  13. Serve immediately while warm.
