  1. Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  2. Wash the apple and carefully core it, leaving the bottom intact to hold the filling.
  3. Heat olive oil in a skillet over medium heat.
  4. Add diced onion and minced garlic clove to the skillet and cook until softened, about 3 minutes.
  5. Add cleaned chicken gizzards to the skillet and cook until browned and cooked through, about 8 minutes.
  6. Season the mixture with fresh thyme leaves, salt, and ground black pepper. Stir well.
  7. Remove the skillet from heat and let the mixture cool slightly.
  8. Fill the cored apple with the chicken gizzard mixture, pressing gently to pack it in.
  9. Place the filled apple in a small baking dish and dot the top with unsalted butter.
