Instructions
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Grease a small tart pan with unsalted butter to prevent sticking.
- In a small bowl, mix the granulated sugar and softened unsalted butter until creamy.
- Add the egg and vanilla extract to the butter mixture and beat until smooth.
- In another bowl, sift together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined to form a batter.
- Arrange the sliced mango pieces evenly at the bottom of the prepared tart pan.
- For the batter gently over the mango slices, spreading it evenly.
- Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Remove the tart from the oven and let it cool for 10 minutes.
- Run a knife around the edges of the tart to loosen it, then invert it carefully onto a serving plate so the mango slices are on top.
- Serve warm or at room temperature, optionally with a dollop of whipped cream or vanilla ice cream.
Tips
- Use ripe but firm mangoes for best texture and sweetness.
- Make sure to grease the tart pan well to avoid sticking when inverting.
