- 30 g brown sugar packed
- 15 ml dark molasses
- 1 teaspoon ground ginger
- 0.5 teaspoon ground cinnamon
- 0.25 teaspoon baking soda
- 0.125 teaspoon salt

Instructions
- Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit).
- In a mixing bowl, cream together the softened unsalted butter and packed brown sugar until light and fluffy.
- Add the dark molasses to the butter and sugar mixture and mix well.
- In a separate bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Roll the dough into small balls about 2.5 cm (1 inch) in diameter and place them on a baking sheet lined with parchment paper, spacing them about 5 cm (2 inches) apart.
- Flatten each ball slightly with the palm of your hand or the bottom of a glass.
- Bake in the preheated oven for 10 to 12 minutes until the edges are firm but the centers are still slightly soft.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
