- 150 g red bell pepper roasted and peeled
- 100 g ripe tomato chopped
- 50 g onion diced
- 1 piece garlic clove minced
- 250 ml vegetable broth low sodium
- 30 ml heavy cream
- 1 tablespoon olive oil extra virgin
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat oven to 220 degrees Celsius (428 Fahrenheit).
- Place red bell pepper on a baking sheet and roast in the oven for 20 minutes until skin is charred.
- Remove roasted red bell pepper from oven and place in a bowl covered with plastic wrap to steam for 10 minutes.
- Peel the skin off the roasted red bell pepper and remove seeds, then chop roughly.
- Heat olive oil in a medium saucepan over medium heat.
- Add diced onion and minced garlic clove to the saucepan and cook for 5 minutes until softened and translucent.
- Add chopped roasted red bell pepper and chopped ripe tomato to the saucepan and cook for 3 minutes, stirring occasionally.
- For vegetable broth into the saucepan and bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove saucepan from heat and use an immersion blender to puree the soup until smooth and creamy.
- Return saucepan to low heat and stir in heavy cream.
- Season soup with a pinch of salt and ground black pepper to taste.
- Simmer soup gently for 5 more minutes, stirring occasionally.
- Serve hot with optional crusty bread or fresh herbs.
