- 50 g goat cheese soft
- 60 ml whole milk
- 10 g unsalted butter
- 10 g all purpose flour
- 2 piece egg white large
- 1 piece egg yolk large
- 1 pinch salt pinch
- 1 pinch black pepper ground pinch
- 1 pinch cream of tartar pinch

- Preheat oven to 190 degrees Celsius (375 degrees Fahrenheit).
- Butter a 1 cup (250 ml) souffle dish and lightly dust with flour, tapping out excess.
- In a small saucepan, melt unsalted butter over medium heat until foaming but not browned.
- Add all purpose flour to the melted butter and whisk continuously for 1 minute to form a roux.
- Gradually For in whole milk while whisking to avoid lumps; cook until mixture thickens and coats the back of a spoon.
- Remove the saucepan from heat and stir in goat cheese soft until melted and smooth.
- Add egg yolk large, salt pinch, and black pepper ground pinch to the cheese mixture and mix well.
- In a clean bowl, beat egg whites large with cream of tartar pinch until stiff peaks form.
- Gently fold one third of the egg whites into the cheese mixture to lighten it.
- Carefully fold in the remaining egg whites in two additions, preserving as much air as possible.
- For the batter into the prepared souffle dish and smooth the top with a spatula.
- Place the souffle dish on a baking sheet and bake in the preheated oven for 20 to 25 minutes until puffed and golden.
- Do not open the oven door during baking to prevent collapse.
