- 150 g fresh tuna loin diced
- 30 ml fresh lime juice
- 15 ml fresh lemon juice
- 30 g red onion thinly sliced
- 5 g fresh cilantro chopped
- 3 g fresh mint leaves chopped
- 5 g fresh jalapeno pepper seeded and minced
- 10 ml extra virgin olive oil
- 1 pinch sea salt
- 1 pinch black pepper ground

- Cut fresh tuna loin into small 1 cm dice and place in a mixing bowl.
- Add fresh lime juice and fresh lemon juice to the tuna and gently stir to coat all pieces.
- Thinly slice red onion and add to the bowl with tuna and citrus juice.
- Chop fresh cilantro and fresh mint leaves finely and add to the mixture.
- Seed and mince fresh jalapeno pepper, then add to the bowl.
- Drizzle extra virgin olive oil over the mixture and stir gently to combine.
- Season with a pinch of sea salt and ground black pepper, then mix again.
- Cover the bowl with plastic wrap and refrigerate for 15 minutes to allow flavors to meld.
- After resting, gently stir the ceviche once more and serve immediately.
