  • 150 g skinless chicken breast diced

  • 150 ml chicken broth low sodium
  • 1 piece lemongrass stalk bruised
  • 3 piece galangal slice
  • 2 piece kaffir lime leaf
  • 1 piece red chili sliced
  • 50 g mushroom white sliced
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice fresh
  • 1 piece garlic clove minced
  • 5 g fresh cilantro chopped
  • 1 teaspoon sugar white
  • 1 pinch salt

  1. Prepare all ingredients by dicing the chicken breast and slicing the mushrooms and red chili.
  2. Bruise the lemongrass stalk by gently crushing it with the back of a knife to release flavor.
  3. In a medium pot, add chicken broth, coconut milk, bruised lemongrass, galangal slices, and kaffir lime leaves.
  4. Bring the mixture to a gentle boil over medium heat, then reduce to a simmer for 10 minutes to infuse flavors.
  5. Add minced garlic, sliced mushrooms, and diced chicken breast to the pot and cook for 8-10 minutes until chicken is cooked through.
  6. Season the soup with fish sauce, sugar, and a pinch of salt; stir well to combine.
  7. Remove the pot from heat and stir in fresh lime juice and chopped cilantro.
  8. Discard lemongrass stalk, galangal slices, and kaffir lime leaves before serving.
  9. Serve hot in a bowl, garnished with extra cilantro or sliced red chili if desired.
