- 150 ml chicken broth low sodium
- 1 piece lemongrass stalk bruised
- 3 piece galangal slice
- 2 piece kaffir lime leaf
- 1 piece red chili sliced
- 50 g mushroom white sliced
- 1 tablespoon fish sauce
- 1 tablespoon lime juice fresh
- 1 piece garlic clove minced
- 5 g fresh cilantro chopped
- 1 teaspoon sugar white
- 1 pinch salt

- Prepare all ingredients by dicing the chicken breast and slicing the mushrooms and red chili.
- Bruise the lemongrass stalk by gently crushing it with the back of a knife to release flavor.
- In a medium pot, add chicken broth, coconut milk, bruised lemongrass, galangal slices, and kaffir lime leaves.
- Bring the mixture to a gentle boil over medium heat, then reduce to a simmer for 10 minutes to infuse flavors.
- Add minced garlic, sliced mushrooms, and diced chicken breast to the pot and cook for 8-10 minutes until chicken is cooked through.
- Season the soup with fish sauce, sugar, and a pinch of salt; stir well to combine.
- Remove the pot from heat and stir in fresh lime juice and chopped cilantro.
- Discard lemongrass stalk, galangal slices, and kaffir lime leaves before serving.
