  • 150 g skinless pork loin sliced
  • 75 g red bell pepper sliced
  • 75 g green bell pepper sliced
  • 75 g yellow bell pepper sliced
  • 1 piece garlic clove minced
  • 5 g fresh ginger minced
  • 15 ml soy sauce low sodium
  • 10 ml vegetable oil
  • 1 teaspoon black pepper ground
  • 5 g cornstarch
  • 10 g spring onion chopped

  1. Slice the skinless pork loin into thin strips about 1 cm wide.
  2. Slice the red, green, and yellow bell peppers into thin strips.
  3. Mince one garlic clove and 5 g of fresh ginger finely.
  4. In a small bowl, mix 15 ml low sodium soy sauce with 5 g cornstarch until smooth.
  5. Heat 10 ml vegetable oil in a wok or large frying pan over medium-high heat.
  6. Add the pork strips to the hot oil and stir fry for 3-4 minutes until browned and cooked through.
  7. Add the minced garlic and ginger to the pork and stir fry for 30 seconds until fragrant.
  8. Add the sliced bell peppers to the wok and stir fry for 2-3 minutes until slightly tender but still crisp.
  9. For the soy sauce and cornstarch mixture over the pork and peppers and stir well to coat and thicken the sauce.
  10. Season with 1 teaspoon ground black pepper and stir to combine.
  11. Remove from heat and sprinkle 10 g chopped spring onion on top before serving.
