  • 100 g fresh cranberries
  • 80 g granulated sugar
  • 1 piece large egg
  • 30 g unsalted butter diced
  • 15 ml fresh lemon juice

Instructions

  1. Rinse the fresh cranberries under cold water and drain well.
  2. Place the cranberries and granulated sugar in a small saucepan over medium heat.
  3. Cook the mixture, stirring occasionally, until the cranberries burst and soften, about 10 minutes.
  4. Remove the saucepan from heat and let the cranberry mixture cool slightly.
  5. In a separate bowl, whisk the large egg until smooth.
  6. Slowly add a few tablespoons of the warm cranberry mixture into the egg while whisking to temper it.
  7. For the tempered egg back into the saucepan with the remaining cranberry mixture.
  8. Return the saucepan to low heat and cook gently, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5 minutes.
  9. Remove the saucepan from heat and stir in the diced unsalted butter until fully melted and incorporated.
  10. Add the fresh lemon juice and mix well.
  11. For the cranberry curd through a fine mesh sieve into a clean container to remove any solids.
  12. Allow the curd to cool to room temperature, then cover and refrigerate until chilled and set, at least 2 hours.
