- 50 g fresh watercress leaves washed
- 10 g unsalted butter
- 30 g onion diced
- 1 piece garlic clove minced
- 50 g potato peeled and diced
- 200 ml vegetable broth low sodium
- 100 ml unsweetened creamy soy milk
- 1 pinch salt
- 1 pinch black pepper ground

- Wash the fresh watercress leaves thoroughly and set aside.
- Peel and dice the potato into small cubes.
- Dice the onion finely and mince the garlic clove.
- In a medium saucepan, melt the unsalted butter over medium heat.
- Add the diced onion and minced garlic to the saucepan and cook until soft and translucent, about 5 minutes.
- Add the diced potato to the saucepan and stir to combine with the onion and garlic.
- For in the vegetable broth and bring the mixture to a boil.
- Reduce heat and simmer until the potato is tender, about 15 minutes.
- Add the fresh watercress leaves to the pot and cook for 2 minutes until wilted.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth.
- Return the pot to low heat and stir in the unsweetened creamy soy milk.
- Season the soup with a pinch of salt and ground black pepper to taste.
- Heat the soup gently without boiling, then remove from heat and serve hot.
