- 200 g lamb shoulder diced
- 150 g long grain white rice
- 30 g tomato paste
- 50 g onion diced
- 60 g carrot peeled sliced
- 50 g eggplant diced
- 40 g green bell pepper diced
- 1 piece garlic clove minced
- 15 ml vegetable oil
- 300 ml water
- 1 teaspoon salt
- 0.5 teaspoon black pepper ground
- 0.5 teaspoon dried thyme
- 1 piece bay leaf

Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add diced lamb shoulder and brown on all sides for about 5 minutes.
- Add diced onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
- Stir in tomato paste and cook for 2 minutes to develop flavor.
- Add water, bay leaf, dried thyme, salt, and ground black pepper to the pot and bring to a boil.
- Reduce heat to low, cover, and simmer the lamb mixture for 45 minutes until meat is tender.
- Add sliced carrots, diced eggplant, and diced green bell pepper to the pot and cook for 10 minutes.
- Remove bay leaf from the pot.
- Add long grain white rice to the pot and stir gently to combine with the sauce and vegetables.
- Cover and cook on low heat for 20 minutes or until rice is tender and liquid is absorbed.
- Turn off heat and let the dish rest covered for 5 minutes before serving.
