- 150 g skinless chicken breast diced
- 50 g long grain white rice uncooked
- 40 g carrot peeled and diced
- 30 g celery stalk diced
- 40 g onion diced
- 1 piece garlic clove minced
- 500 ml chicken broth low sodium
- 1 tablespoon olive oil extra virgin
- 1 pinch salt
- 1 pinch black pepper ground
- 1 tablespoon fresh parsley chopped

Instructions
- Heat olive oil in a medium pot over medium heat.
- Add diced onion and minced garlic to the pot and cook until onion is translucent, about 3 minutes.
- Add diced carrot and diced celery to the pot and cook for another 5 minutes, stirring occasionally.
- Add diced skinless chicken breast to the pot and cook until the chicken is no longer pink, about 5 minutes.
- For in the chicken broth and bring the mixture to a boil.
- Add uncooked long grain white rice to the pot, reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and chicken is cooked through.
- Season the soup with salt and ground black pepper to taste.
- Stir in chopped fresh parsley just before serving.
