  • 30 ml whole milk
  • 15 g shallot minced
  • 1 piece garlic clove minced

  1. Place dried porcini mushrooms in a small bowl and cover with warm water. Let soak for 20 minutes until soft.
  2. Drain mushrooms, reserving soaking liquid. Chop mushrooms finely and strain soaking liquid through a fine sieve to remove grit.
  3. In a small bowl, beat eggs with whole milk, salt, and ground black pepper until well combined.
  4. Heat unsalted butter in a nonstick skillet over medium heat until melted and foaming.
  5. Add minced shallot and garlic to the skillet and cook for 2 minutes until softened and fragrant, stirring frequently.
  6. Add chopped porcini mushrooms to the skillet and cook for 3 minutes, stirring occasionally to combine flavors.
  7. For the beaten egg mixture evenly over the mushrooms and shallots in the skillet. Reduce heat to low.

  10. Using a spatula, carefully fold one half of the omelette over the other to form a half-moon shape.
