- 10 g unsalted butter
- 3 piece large egg
- 30 ml whole milk
- 15 g shallot minced
- 1 piece garlic clove minced
- 5 g fresh parsley chopped

- 1 pinch black pepper ground

- Place dried porcini mushrooms in a small bowl and cover with warm water. Let soak for 20 minutes until soft.
- Drain mushrooms, reserving soaking liquid. Chop mushrooms finely and strain soaking liquid through a fine sieve to remove grit.
- In a small bowl, beat eggs with whole milk, salt, and ground black pepper until well combined.
- Heat unsalted butter in a nonstick skillet over medium heat until melted and foaming.
- Add minced shallot and garlic to the skillet and cook for 2 minutes until softened and fragrant, stirring frequently.
- Add chopped porcini mushrooms to the skillet and cook for 3 minutes, stirring occasionally to combine flavors.
- For the beaten egg mixture evenly over the mushrooms and shallots in the skillet. Reduce heat to low.
- Cook the omelette gently without stirring until the edges begin to set, about 3 minutes.
- Sprinkle chopped fresh parsley evenly over the omelette surface.
- Using a spatula, carefully fold one half of the omelette over the other to form a half-moon shape.
- Cook for another 1-2 minutes until the omelette is fully set but still moist inside.
- Slide the omelette onto a plate and serve immediately.
