- 100 g penne rigate pasta dry
- 50 g red bell pepper diced
- 50 g yellow bell pepper diced
- 70 g spicy chorizo sausage sliced
- 1 piece garlic clove minced
- 1 tablespoon olive oil extra virgin
- 100 ml tomato passata
- 40 g onion diced
- 0.5 teaspoon dried chili flakes
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Bring a large pot of salted water to a boil.
- Add penne rigate pasta to boiling water and cook according to package instructions until al dente, about 11 minutes.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add diced onion to the skillet and cook until translucent, about 3 minutes.
- Add minced garlic and cook for 1 minute until fragrant, stirring frequently.
- Add sliced spicy chorizo sausage to the skillet and cook until browned, about 5 minutes.
- Add diced red and yellow bell peppers to the skillet and cook for 4 minutes until slightly softened.
- Stir in tomato passata and dried chili flakes, simmer the sauce for 5 minutes, stirring occasionally.
- Season the sauce with salt and ground black pepper to taste.
- Drain the cooked pasta, reserving a small cup of pasta water.
- Add drained pasta to the skillet with the sauce and toss to combine, adding reserved pasta water if needed to loosen the sauce.
- Serve hot, garnished with extra chili flakes if desired.
