Ingredients

  • 4 piece iceberg lettuce leaves
  • 100 g ground chicken breast (lean)
  • 30 g carrot shredded
  • 30 g red bell pepper diced
  • 15 g green onion sliced
  • 1 piece garlic clove minced
  • 15 ml soy sauce low sodium
  • 10 ml hoisin sauce
  • 5 ml sesame oil toasted
  • 5 g fresh ginger minced
  • 10 g crushed peanuts unsalted
  • 10 ml lime juice fresh
  • 1 pinch black pepper ground

Instructions

  1. Wash iceberg lettuce leaves gently and pat dry with paper towels.
  2. Peel and mince garlic clove and fresh ginger finely.
  3. Dice red bell pepper and shred carrot into thin strips.
  4. Slice green onion thinly and set aside.
  5. Heat a non-stick skillet over medium heat and add toasted sesame oil.
  6. Add minced garlic and ginger to the skillet and cook for 1 minute until fragrant.
  7. Add ground chicken breast to the skillet and cook, breaking it apart with a spatula, until fully cooked and no longer pink.
  8. Add diced red bell pepper, shredded carrot, and sliced green onion to the skillet and stir for 2 minutes to soften slightly.
  9. For in low sodium soy sauce and hoisin sauce, stirring to combine all ingredients well.
  10. Add fresh lime juice and a pinch of ground black pepper, stir and cook for another minute.
  11. Remove skillet from heat and transfer the chicken mixture to a bowl.
  12. To serve, spoon the chicken mixture evenly onto each iceberg lettuce leaf.
  13. Sprinkle crushed unsalted peanuts over the top of the chicken mixture on each lettuce wrap.
  14. Fold the lettuce leaves around the filling and enjoy immediately for best freshness.
