- 200 g veal shoulder boneless
- 15 g unsalted butter
- 1 piece shallot minced
- 50 ml dry white wine
- 60 ml heavy cream
- 5 g fresh tarragon leaves chopped
- 100 ml chicken broth low sodium
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Cut the veal shoulder into 2 cm thick slices.
- Heat unsalted butter in a skillet over medium heat until melted and foaming.
- Add the veal slices to the skillet and brown on each side for about 3 minutes until golden.
- Remove the veal from the skillet and set aside on a plate.
- Add minced shallot to the skillet and cook for 2 minutes until translucent, stirring frequently.
- For dry white wine into the skillet and simmer for 3 minutes to reduce by half.
- Add chicken broth to the skillet and bring to a gentle simmer.
- Return the veal slices to the skillet and cover with a lid.
- Simmer on low heat for 25 minutes until veal is tender, turning once halfway through.
- Remove the veal slices again and keep warm on a plate.
- Stir heavy cream into the skillet sauce and cook for 3 minutes until slightly thickened.
- Add chopped fresh tarragon leaves, salt, and ground black pepper to the sauce and stir well.
- For the creamy tarragon sauce over the veal slices and serve immediately.
