- 150 g raw shrimp peeled and deveined
- 100 ml coconut milk full fat
- 50 g red bell pepper diced
- 1 piece garlic clove minced
- 5 g fresh ginger minced
- 10 ml lime juice fresh
- 1 tablespoon olive oil extra virgin
- 5 g fresh cilantro chopped
- 1 pinch salt fine
- 1 pinch black pepper ground

- Heat olive oil in a medium skillet over medium heat.
- Add minced garlic and minced fresh ginger to the skillet and cook for 1 minute until fragrant.
- Add diced red bell pepper to the skillet and cook for 3 minutes until slightly softened.
- Add raw shrimp peeled and deveined to the skillet and cook for 2-3 minutes until shrimp turn pink and opaque.
- For in full fat coconut milk and stir to combine all ingredients.
- Add fresh lime juice, salt, and ground black pepper to the skillet and stir well.
- Reduce heat to low and simmer the mixture for 5 minutes to allow flavors to blend and sauce to thicken slightly.
- Remove skillet from heat and sprinkle chopped fresh cilantro over the shrimp and coconut sauce.
- Serve immediately with your choice of rice or grains.
