  • 150 g raw shrimp peeled and deveined
  • 100 ml coconut milk full fat
  • 50 g red bell pepper diced
  • 1 piece garlic clove minced
  • 5 g fresh ginger minced
  • 10 ml lime juice fresh
  • 1 tablespoon olive oil extra virgin
  • 5 g fresh cilantro chopped
  • 1 pinch salt fine
  • 1 pinch black pepper ground

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add minced garlic and minced fresh ginger to the skillet and cook for 1 minute until fragrant.
  3. Add diced red bell pepper to the skillet and cook for 3 minutes until slightly softened.
  4. Add raw shrimp peeled and deveined to the skillet and cook for 2-3 minutes until shrimp turn pink and opaque.
  5. For in full fat coconut milk and stir to combine all ingredients.
  6. Add fresh lime juice, salt, and ground black pepper to the skillet and stir well.
  7. Reduce heat to low and simmer the mixture for 5 minutes to allow flavors to blend and sauce to thicken slightly.
  8. Remove skillet from heat and sprinkle chopped fresh cilantro over the shrimp and coconut sauce.
  9. Serve immediately with your choice of rice or grains.
