  • 80 g arborio rice
  • 50 g fresh spinach leaves
  • 70 g white button mushrooms sliced
  • 300 ml vegetable broth
  • 15 g unsalted butter
  • 30 g onion diced
  • 1 piece garlic clove minced
  • 20 g parmesan cheese grated
  • 50 ml dry white wine
  • 10 ml olive oil
  • 1 pinch salt
  • 1 pinch black pepper ground

Instructions

  1. Heat the vegetable broth in a saucepan and keep it warm on low heat.
  2. In a large pan, heat olive oil over medium heat.
  3. Add diced onion and minced garlic clove to the pan and cook until translucent, about 3 minutes.
  4. Add sliced white button mushrooms and cook until they release moisture and soften, about 5 minutes.
  5. Add arborio rice to the pan and stir well to coat the rice with oil and cook for 1-2 minutes until slightly translucent at edges.
  6. For in dry white wine and stir until it is mostly absorbed by the rice.
  7. Add a ladle of warm vegetable broth to the rice and stir continuously until the liquid is mostly absorbed.
  8. Repeat adding broth one ladle at a time, stirring frequently, until rice is creamy and cooked al dente, about 18-20 minutes.
  9. In the last 5 minutes of cooking, stir in fresh spinach leaves and cook until wilted.
  10. Remove the pan from heat and stir in unsalted butter and grated parmesan cheese until melted and creamy.
  11. Season with salt and ground black pepper to taste.
  12. Serve the risotto immediately while hot and creamy.
