  • 150 g white button mushrooms cleaned and sliced
  • 20 ml extra virgin olive oil
  • 10 ml red wine vinegar
  • 1 piece garlic clove minced
  • 1 teaspoon dried oregano
  • 10 ml fresh lemon juice
  • 1 pinch black pepper ground
  • 1 pinch sea salt
  • 5 g fresh parsley chopped

  1. Clean mushrooms with a damp cloth and slice them evenly.
  2. Bring a pot of water to boil and blanch the sliced mushrooms for 2 minutes.
  3. Drain mushrooms and immediately transfer them to ice water to stop cooking.
  4. In a bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, fresh lemon juice, salt, and black pepper.
  5. Drain mushrooms from ice water and pat dry with paper towels.
  6. Add mushrooms to the marinade and mix well to coat all pieces.
  7. Cover the bowl and refrigerate for at least 2 hours to allow flavors to develop.
  8. Before serving, sprinkle chopped fresh parsley over the marinated mushrooms and toss gently.
