- 150 g skinless chicken breast diced
- 30 g cashew nuts unsalted
- 50 g onion diced
- 1 piece garlic clove minced
- 10 g fresh ginger minced
- 100 ml coconut milk full fat
- 1 tablespoon vegetable oil
- 1 tablespoon curry powder
- 0.5 teaspoon ground turmeric
- 0.5 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper ground
- 5 g fresh cilantro chopped
- 50 ml water

Instructions
- Heat vegetable oil in a medium pan over medium heat.
- Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and minced fresh ginger; cook for 1 minute until fragrant.
- Add curry powder, ground turmeric, and ground cumin; stir well and cook for 1 minute to release flavors.
- Add diced skinless chicken breast to the pan; cook until chicken is lightly browned on all sides, about 5 minutes.
- For in coconut milk and water; stir to combine and bring to a simmer.
- Add cashew nuts unsalted and salt and ground black pepper; stir well.
- Cover the pan and let simmer on low heat for 15 minutes until chicken is cooked through and sauce thickens.
- Remove the lid and cook for an additional 5 minutes to reduce sauce slightly if needed.
- Stir in chopped fresh cilantro just before serving.
