  • 1 pinch black pepper ground
  • 200 ml vegetable oil for frying
  • 1 piece lemon wedge
  • 1 piece garlic clove minced
  • 5 g fresh parsley chopped

  1. Prepare the seafood by cutting the white fish fillet into bite-sized pieces and ensuring shrimp and scallops are clean and dry.
  2. In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and ground black pepper.
  3. Add cold sparkling water gradually to the dry ingredients while whisking gently to form a smooth batter without lumps.
  4. Heat vegetable oil in a deep frying pan or pot to 180 degrees Celsius (use a thermometer if available).
  5. Dip each piece of seafood into the batter, ensuring it is fully coated.
  6. Carefully place the battered seafood pieces into the hot oil, frying in batches to avoid overcrowding.
  7. Fry the seafood bites for about 2-3 minutes or until golden brown and crispy, turning occasionally for even cooking.
