  • 150 g celery root peeled and diced
  • 50 ml whole milk
  • 30 ml heavy cream
  • 10 g unsalted butter
  • 1 piece large egg
  • 0.5 piece garlic clove minced
  • 0.25 teaspoon salt
  • 0.1 teaspoon ground white pepper
  • 0.1 teaspoon grated nutmeg

Instructions

  1. Preheat the oven to 160 C (320 F).
  2. Butter four small ramekins or mini flan molds.
  3. Place the diced celery root in a saucepan and cover with water.
  4. Bring to a boil and cook until the celery root is very tender, about 15 minutes.
  5. Drain the celery root well and transfer to a blender or food processor.
  6. Add whole milk, heavy cream, unsalted butter, minced garlic clove, salt, ground white pepper, and grated nutmeg to the blender.
  7. Blend until the mixture is very smooth and creamy.
  8. Add the large egg and blend briefly to combine without overmixing.
  9. For the mixture evenly into the prepared ramekins.
  10. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins to create a water bath.
  11. Bake in the preheated oven for 30 to 35 minutes, or until the flans are set but still slightly jiggly in the center.
  12. Remove the ramekins from the water bath and let cool slightly before serving.
