- 80 g granulated sugar
- 60 g unsalted butter softened
- 1 piece large egg
- 50 ml coconut milk full fat
- 30 ml coffee liqueur
- 1 teaspoon baking powder
- 0.5 teaspoon vanilla extract
- 20 g shredded coconut unsweetened
- 5 g powdered sugar for dusting

- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Grease a small cake pan with butter and lightly dust with flour.
- In a mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.
- Add the large egg and vanilla extract to the butter mixture and beat well.
- In a separate bowl, sift together the all purpose flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing gently.
- For in the coconut milk and coffee liqueur, stirring until the batter is smooth and combined.
- Fold in the shredded unsweetened coconut carefully.
- For the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes.
- Transfer the cake to a wire rack to cool completely.
- Once cooled, dust the top with powdered sugar before serving.
