- 100 g green zucchini sliced
- 100 g yellow zucchini sliced
- 50 g red cherry tomatoes halved
- 5 g fresh basil leaves chopped
- 15 ml extra virgin olive oil
- 10 ml fresh lemon juice
- 1 piece garlic clove minced
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Wash and dry the green and yellow zucchinis thoroughly.
- Slice the green zucchini into thin rounds about 3 mm thick.
- Slice the yellow zucchini into thin rounds about 3 mm thick.
- Wash the red cherry tomatoes and cut each in half.
- Chop fresh basil leaves finely and set aside.
- In a small bowl, combine extra virgin olive oil, fresh lemon juice, minced garlic clove, salt, and ground black pepper to make the dressing.
- In a large mixing bowl, add the sliced green and yellow zucchinis and halved cherry tomatoes.
- For the dressing over the vegetables in the bowl.
- Toss gently to coat all the vegetables evenly with the dressing.
- Sprinkle chopped basil leaves on top and toss lightly again.
- Transfer the salad to a serving plate and serve immediately or chill for 10 minutes before serving.

- Use fresh and firm zucchinis for best texture.
- Adjust lemon juice and olive oil to taste for dressing.
