  • 150 g skinless chicken thigh
  • 40 g dried apricots chopped
  • 50 g onion diced
  • 1 piece garlic clove minced
  • 5 g fresh ginger minced
  • 50 ml tomato puree
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon turmeric powder
  • 0.25 teaspoon cinnamon ground
  • 100 ml chicken stock low sodium
  • 30 ml plain yogurt whole milk
  • 0.25 teaspoon salt
  • 0.1 teaspoon black pepper ground
  • 5 g fresh cilantro chopped

Instructions

  1. Heat vegetable oil in a medium skillet over medium heat.
  2. Add diced onion and cook until soft and translucent, about 5 minutes.
  3. Add minced garlic and minced fresh ginger, cook for 1 minute until fragrant.
  4. Add ground cumin, ground coriander, turmeric powder, and ground cinnamon; stir and cook for 30 seconds to release aromas.
  5. Add skinless chicken thigh pieces to the skillet and cook until lightly browned on all sides, about 5 minutes.
  6. Stir in tomato puree and chopped dried apricots, mixing well with the chicken and spices.
  7. For in low sodium chicken stock and bring to a simmer.
  8. Cover and cook on low heat for 15 minutes until chicken is cooked through and sauce thickens.
  9. Remove from heat and stir in plain whole milk yogurt until well combined.
  10. Season with salt and ground black pepper to taste.
  11. Garnish with chopped fresh cilantro before serving.
