- 150 g skinless chicken thigh
- 40 g dried apricots chopped
- 50 g onion diced
- 1 piece garlic clove minced
- 5 g fresh ginger minced
- 50 ml tomato puree
- 1 tablespoon vegetable oil
- 0.5 teaspoon ground cumin
- 0.5 teaspoon ground coriander
- 0.25 teaspoon turmeric powder
- 0.25 teaspoon cinnamon ground
- 100 ml chicken stock low sodium
- 30 ml plain yogurt whole milk
- 0.25 teaspoon salt
- 0.1 teaspoon black pepper ground
- 5 g fresh cilantro chopped

Instructions
- Heat vegetable oil in a medium skillet over medium heat.
- Add diced onion and cook until soft and translucent, about 5 minutes.
- Add minced garlic and minced fresh ginger, cook for 1 minute until fragrant.
- Add ground cumin, ground coriander, turmeric powder, and ground cinnamon; stir and cook for 30 seconds to release aromas.
- Add skinless chicken thigh pieces to the skillet and cook until lightly browned on all sides, about 5 minutes.
- Stir in tomato puree and chopped dried apricots, mixing well with the chicken and spices.
- For in low sodium chicken stock and bring to a simmer.
- Cover and cook on low heat for 15 minutes until chicken is cooked through and sauce thickens.
- Remove from heat and stir in plain whole milk yogurt until well combined.
- Season with salt and ground black pepper to taste.
- Garnish with chopped fresh cilantro before serving.
