- 150 g skinless turkey breast
- 15 ml olive oil extra virgin
- 1 piece garlic clove minced
- 1 teaspoon fresh rosemary chopped
- 1 teaspoon lemon zest grated
- 1 pinch sea salt
- 1 pinch black pepper ground
- 80 g cherry tomatoes halved
- 50 g spinach fresh

Instructions
- Preheat oven to 190 degrees Celsius (375 Fahrenheit).
- Pat dry the skinless turkey breast with paper towels.
- In a small bowl, mix olive oil, minced garlic clove, chopped rosemary, grated lemon zest, sea salt, and ground black pepper.
- Brush the turkey breast evenly with the olive oil mixture on all sides.
- Place the turkey breast in a baking dish and roast in the preheated oven for 25 minutes.
- While turkey roasts, wash and halve the cherry tomatoes.
- After 25 minutes, add cherry tomatoes around the turkey in the baking dish and roast for an additional 10 minutes.
- Remove the baking dish from the oven and let the turkey rest for 5 minutes.
- In a skillet over medium heat, lightly saute fresh spinach until just wilted, about 2 minutes.
- Slice the rested turkey breast and serve on a plate with roasted cherry tomatoes and sauteed spinach.
