  • 30 ml whole milk
  • 5 ml white vinegar
  • 0.5 teaspoon baking soda
  • 5 g cocoa powder unsweetened
  • 2 ml vanilla extract
  • 0.25 teaspoon salt

  1. Preheat your oven to 175 degrees Celsius (350 degrees Fahrenheit). Grease and flour a small cake pan.
  2. In a bowl, mix the grated fresh beet with the white vinegar and baking soda. It will fizz; stir and set aside.
  3. In a separate large bowl, cream the softened unsalted butter and granulated sugar until light and fluffy using a hand mixer or whisk.
  4. Add the large egg and vanilla extract to the butter mixture and beat well until combined.
  5. In another bowl, sift together the all purpose flour, cocoa powder, and salt.
  6. Alternately add the dry ingredients and whole milk to the butter mixture, beginning and ending with the dry ingredients. Mix gently after each addition.
