- 10 g galangal sliced
- 1 piece lemongrass stalk bruised
- 3 piece kaffir lime leaves torn
- 50 g mushroom straw sliced
- 1 piece bird eye chili sliced
- 1 tablespoon fish sauce
- 1 tablespoon lime juice fresh
- 1 teaspoon sugar palm or brown sugar
- 1 tablespoon cilantro fresh chopped

- Prepare all ingredients: dice chicken breast, slice galangal, bruise lemongrass stalk, tear kaffir lime leaves, slice straw mushrooms, slice bird eye chili, chop cilantro.
- In a medium pot, combine chicken broth, coconut milk, sliced galangal, bruised lemongrass stalk, and torn kaffir lime leaves.
- Bring the mixture to a gentle boil over medium heat, then reduce to simmer for 10 minutes to infuse flavors.
- Add diced chicken breast and sliced straw mushrooms to the pot, simmer gently for 5 to 7 minutes until chicken is cooked through.
- Add sliced bird eye chili, fish sauce, lime juice, and sugar to the soup; stir well and simmer for another 2 minutes.
- Remove the pot from heat and discard galangal slices, lemongrass stalk, and kaffir lime leaves if desired.
- Ladle soup into a bowl and garnish with fresh chopped cilantro before serving.
