- Preheat the oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
- In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
- Add the cold diced unsalted butter to the dry ingredients. Use your fingers or a pastry cutter to rub the butter into the flour mixture until it resembles coarse crumbs.
- In a separate small bowl, mix the mashed ripe banana, buttermilk, and vanilla extract until combined.
