- 150 g fresh strawberries hulled
- 100 g cucumber peeled and diced
- 50 g red bell pepper seeded and chopped
- 100 g tomato ripe diced
- 20 g red onion small diced
- 5 g fresh basil leaves chopped
- 10 ml extra virgin olive oil
- 5 ml red wine vinegar
- 50 ml cold water
- 1 pinch salt pinch
- 1 pinch black pepper ground pinch

Instructions
- Wash and hull the fresh strawberries, then roughly chop them.
- Peel the cucumber, remove seeds if large, and dice into small pieces.
- Seed the red bell pepper and chop into small pieces.
- Dice the ripe tomato into small cubes.
- Peel and finely dice the small red onion.
- Chop fresh basil leaves finely.
- In a blender, combine strawberries, cucumber, red bell pepper, tomato, red onion, and basil.
- Add extra virgin olive oil, red wine vinegar, cold water, salt, and ground black pepper to the blender.
- Blend all ingredients until smooth and creamy.
- Taste and adjust seasoning with more salt or vinegar if needed.
- Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- Serve cold in a bowl or glass, optionally garnished with a basil leaf or small strawberry slice.
