- 100 g cooked penne pasta
- 120 g skinless salmon fillet cooked and flaked
- 80 g zucchini medium diced
- 50 g cherry tomatoes halved
- 5 g fresh basil leaves chopped
- 15 ml extra virgin olive oil
- 10 ml lemon juice fresh
- 1 piece garlic clove minced
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Bring a pot of salted water to a boil and cook the penne pasta until al dente according to package instructions.
- Drain the pasta and rinse under cold water to cool it down, then set aside.
- Wash the zucchini and dice it into small cubes about 1 cm in size.
- Heat a non-stick pan over medium heat and add half the olive oil.
- Add the diced zucchini to the pan and cook for 3 to 4 minutes until tender but still firm, then remove from heat and let cool.
- Wash and halve the cherry tomatoes, then chop the fresh basil leaves finely.
- In a large mixing bowl, combine the cooled pasta, cooked zucchini, flaked salmon, cherry tomatoes, and chopped basil.
- In a small bowl, whisk together the remaining olive oil, fresh lemon juice, minced garlic, salt, and ground black pepper to make the dressing.
- For the dressing over the pasta salad and toss gently to combine all ingredients evenly.
- Taste and adjust seasoning with additional salt or pepper if needed.
- Serve the salmon and zucchini pasta salad chilled or at room temperature for best flavor. Enjoy!
