  • 50 g red currant jelly

  1. Preheat oven to 180 degrees Celsius (350 Fahrenheit).
  2. Grease and flour a small cake pan suitable for one serving.
  3. In a mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy.

  11. Remove the cake from the oven and let it cool in the pan for 10 minutes.
  12. Turn the cake out onto a wire rack and allow it to cool completely before serving.
