  • 150 g skinless chicken breast diced
  • 150 g white rice cooked
  • 1 piece large egg
  • 15 g green onion sliced
  • 15 ml soy sauce low sodium
  • 10 ml vegetable oil
  • 1 piece garlic clove minced
  • 5 g ginger fresh minced
  • 1 pinch black pepper ground

Instructions

  1. Cook white rice according to package instructions and keep warm.
  2. Heat vegetable oil in a nonstick skillet over medium heat.
  3. Add minced garlic and minced fresh ginger to the skillet and cook for 1 minute until fragrant.
  4. Add diced skinless chicken breast to the skillet and cook until no longer pink, about 5-7 minutes, stirring occasionally.
  5. Push chicken to one side of the skillet and crack the large egg into the empty side.
  6. Scramble the egg gently until fully cooked, then mix with the chicken.
  7. Add sliced green onion and low sodium soy sauce to the skillet and stir to combine.
  8. Season with a pinch of ground black pepper and cook for another minute.
  9. Serve the chicken and egg mixture over the cooked white rice while hot.
