  • 150 g skinless chicken breast diced
  • 75 g basmati rice uncooked
  • 50 g onion medium diced
  • 1 piece garlic clove minced
  • 5 g ginger fresh minced
  • 50 g tomato medium diced
  • 30 ml plain yogurt whole milk
  • 1 tablespoon vegetable oil
  • 150 ml water
  • 0.5 teaspoon cumin seeds
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon turmeric powder
  • 0.5 teaspoon garam masala powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper ground
  • 5 g fresh cilantro chopped

Instructions

  1. Rinse basmati rice under cold water until water runs clear, then soak for 15 minutes.
  2. Heat vegetable oil in a medium pot over medium heat.
  3. Add cumin seeds and cook until they start to sizzle, about 30 seconds.
  4. Add diced onion and cook until golden brown, about 5 minutes.
  5. Add minced garlic and ginger, cook for 1 minute until fragrant.
  6. Add diced tomato and cook until soft, about 3 minutes.
  7. Add diced chicken breast and cook until no longer pink, about 5 minutes.
  8. Stir in plain yogurt, ground coriander, turmeric powder, garam masala, salt, and black pepper; cook for 2 minutes.
  9. Drain rice and add it to the pot, stirring gently to combine with the chicken mixture.
  10. Add water and bring to a boil.
  11. Reduce heat to low, cover pot with a tight-fitting lid, and simmer for 15 minutes until rice is cooked and water absorbed.
  12. Turn off heat and let biryani rest covered for 5 minutes.
  13. Fluff rice gently with a fork and garnish with chopped fresh cilantro before serving.
