- 50 g carrot peeled and diced
- 50 g red bell pepper diced
- 40 g yellow onion diced
- 1 piece garlic clove minced
- 200 ml chicken broth low sodium
- 1 tablespoon olive oil extra virgin
- 0.5 teaspoon dried oregano
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper ground

- Heat olive oil in a large pot over medium heat.
- Add diced yellow onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
- Add diced skinless chicken breast to the pot and cook until lightly browned on all sides, about 5 minutes.
- Add diced carrot and red bell pepper to the pot and stir to combine.
- Add uncooked long grain white rice to the pot and stir for 1 minute to toast the rice slightly.
- For in low sodium chicken broth and add dried oregano, salt, and ground black pepper.
- Bring the mixture to a boil, then reduce heat to low and cover the pot with a lid.
- Simmer gently for 18-20 minutes until the rice is cooked and liquid is absorbed.
- Remove the pot from heat and let it rest covered for 5 minutes.
- Fluff the rice with a fork and serve warm.
