  • 50 g carrot peeled and diced
  • 50 g red bell pepper diced
  • 40 g yellow onion diced
  • 1 piece garlic clove minced
  • 200 ml chicken broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper ground

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced yellow onion and minced garlic clove to the pot and cook until softened, about 3 minutes.
  3. Add diced skinless chicken breast to the pot and cook until lightly browned on all sides, about 5 minutes.
  4. Add diced carrot and red bell pepper to the pot and stir to combine.
  5. Add uncooked long grain white rice to the pot and stir for 1 minute to toast the rice slightly.
  6. For in low sodium chicken broth and add dried oregano, salt, and ground black pepper.
  7. Bring the mixture to a boil, then reduce heat to low and cover the pot with a lid.
  8. Simmer gently for 18-20 minutes until the rice is cooked and liquid is absorbed.
  9. Remove the pot from heat and let it rest covered for 5 minutes.
  10. Fluff the rice with a fork and serve warm.
