  • 100 g all purpose flour
  • 50 g unsalted butter chilled diced
  • 30 g granulated sugar
  • 1 piece egg yolk
  • 50 ml whole milk
  • 50 ml heavy cream
  • 20 g granulated sugar for topping

  1. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. In a bowl, combine all purpose flour and granulated sugar.
  3. Add chilled diced unsalted butter to the flour mixture.
  4. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
  5. Add egg yolk and mix until dough forms a ball.
  6. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  7. Roll out the dough on a floured surface to fit a 15 cm tart pan.
  8. Place dough into the tart pan and press it evenly on the bottom and sides.
  9. Prick the bottom of the dough with a fork to prevent puffing.
  10. Bake the tart shell for 15 minutes until lightly golden.
  11. In a saucepan, combine whole milk, heavy cream, and granulated sugar for topping.
  12. Heat the mixture over medium heat until sugar dissolves and mixture is warm but not boiling.
  13. For the warm cream mixture into the baked tart shell.
  14. Bake the tart for an additional 15 minutes until the filling is set and golden on top.
  15. Remove tart from oven and let cool before serving.
