- 100 g cucumber peeled and sliced
- 80 g cherry tomatoes halved
- 20 g red onion thinly sliced
- 5 g fresh parsley chopped
- 15 ml extra virgin olive oil
- 10 ml fresh lemon juice
- 5 ml honey
- 1 pinch salt
- 1 pinch black pepper ground

- Wash the cucumber and peel it using a vegetable peeler.
- Slice the peeled cucumber into thin rounds and place them in a salad bowl.
- Wash the cherry tomatoes and cut each in half, then add to the bowl.
- Peel the red onion and slice it very thinly, then add to the bowl.
- Chop the fresh parsley finely and add it to the salad bowl.
- In a small bowl, combine the extra virgin olive oil, fresh lemon juice, and honey.
