- 150 g cod fillet skinless
- 100 g smoked haddock fillet skinless
- 200 g potato peeled and chopped
- 20 g unsalted butter
- 100 ml whole milk
- 50 g leek white part sliced
- 30 g carrot peeled and diced
- 30 g frozen peas
- 5 g fresh parsley chopped
- 10 g plain flour
- 100 ml water
- 1 piece egg yolk
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat oven to 200 degrees Celsius.
- Place peeled and chopped potatoes in a pot of salted water and boil until tender, about 15 minutes.
- Drain potatoes and mash with 10g unsalted butter and 50ml whole milk until smooth. Set aside.
- In a saucepan, melt 10g unsalted butter over medium heat.
- Add sliced white part of leek and diced carrot to the saucepan and cook gently until softened, about 5 minutes.
- Sprinkle 10g plain flour over the vegetables and stir well to form a roux.
- Gradually add 100ml water and 50ml whole milk to the roux, stirring constantly to make a smooth sauce.
- Add skinless cod fillet and smoked haddock fillet to the sauce and poach gently until fish is cooked through, about 5 minutes.
- Remove fish from sauce and flake into large pieces, discarding any bones.
- Return flaked fish to the sauce along with frozen peas and chopped fresh parsley. Season with a pinch of salt and ground black pepper.
- For fish mixture into an ovenproof dish.
- Spread mashed potato evenly over the fish mixture, smoothing the top.
- Brush the mashed potato with beaten egg yolk for a golden crust.
- Bake in preheated oven for 20 minutes or until the top is golden and crispy.
- Remove from oven and let rest for 5 minutes before serving.
