  • 180 g monkfish tail fillet skinless
  • 50 g bacon strips smoked
  • 100 ml pinot noir dry red wine
  • 20 g unsalted butter
  • 1 piece shallot minced
  • 50 ml chicken stock low sodium
  • 1 tablespoon olive oil extra virgin
  • 1 piece fresh thyme sprig
  • 1 pinch salt fine
  • 1 pinch black pepper ground

Instructions

  1. Pat dry the monkfish tail fillet with paper towels and season both sides with salt and ground black pepper.
  2. Heat the extra virgin olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the bacon strips to the skillet and cook until crisp, about 4 minutes, then remove and set aside on paper towels to drain.
  4. In the same skillet with bacon fat, add the monkfish fillet and cook for 3-4 minutes on each side until golden and cooked through. Remove and keep warm.
  5. Add the minced shallot to the skillet and cook over medium heat until softened, about 2 minutes.
  6. For in the pinot noir dry red wine and chicken stock, scraping the bottom of the pan to release browned bits.
  7. Add the fresh thyme sprig and simmer the sauce until reduced by half, about 5-7 minutes.
  8. Remove the thyme sprig and whisk in the unsalted butter until the sauce is smooth and glossy.
  9. Return the bacon strips to the skillet to warm briefly in the sauce.
  10. Plate the monkfish fillet, spoon the bacon and pinot noir sauce over the top, and serve immediately.
