  • 100 g chestnuts peeled raw
  • 2 piece garlic clove minced
  • 1 piece fresh rosemary sprig
  • 100 ml dry white wine
  • 20 g unsalted butter
  • 15 ml olive oil extra virgin
  • 1 pinch sea salt
  • 1 pinch black pepper ground

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Pat dry the wild boar leg with paper towels and season it evenly with sea salt and ground black pepper.
  3. Heat olive oil in a large ovenproof skillet over medium-high heat.
  4. Sear the wild boar leg on all sides until browned, about 3 minutes per side.
  5. Remove the skillet from heat and add minced garlic and fresh rosemary sprig around the meat.
  6. For dry white wine into the skillet to deglaze, scraping up browned bits from the bottom.
  7. Add peeled raw chestnuts around the wild boar leg in the skillet.
  8. Place small pieces of unsalted butter on top of the wild boar leg and chestnuts.
  9. Transfer the skillet to the preheated oven and roast for 45 minutes, basting occasionally with pan juices.
  10. Check the internal temperature of the wild boar leg; it should reach 70 degrees Celsius (160 degrees Fahrenheit) for safe consumption.
  11. Remove the skillet from the oven and let the wild boar leg rest for 10 minutes before slicing.
