  • 200 ml whole milk
  • 250 ml chicken broth low sodium
  • 10 g unsalted butter
  • 30 g onion diced
  • 1 piece garlic clove minced
  • 1 pinch salt
  • 1 pinch black pepper ground
  • 10 g parmesan cheese grated

  1. Rinse the white rice under cold water until water runs clear.
  2. In a medium pot, melt the unsalted butter over medium heat.
  3. Add the diced onion and minced garlic clove to the pot and cook until soft and translucent, about 3 minutes.
  4. Add the rinsed rice to the pot and stir to coat with butter and onions for 1 minute.
  5. For in the chicken broth and whole milk, stir well.
  6. Bring the mixture to a gentle boil, then reduce heat to low and simmer uncovered for 25 minutes, stirring occasionally to prevent sticking.
  7. Season the soup with a pinch of salt and ground black pepper.
  8. Once the rice is tender and the soup has thickened to a creamy consistency, remove from heat.
  9. Stir in the grated parmesan cheese until melted and combined.
