- 50 g white rice uncooked
- 200 ml whole milk
- 250 ml chicken broth low sodium
- 10 g unsalted butter
- 30 g onion diced
- 1 piece garlic clove minced
- 1 pinch salt
- 1 pinch black pepper ground
- 10 g parmesan cheese grated

- Rinse the white rice under cold water until water runs clear.
- In a medium pot, melt the unsalted butter over medium heat.
- Add the diced onion and minced garlic clove to the pot and cook until soft and translucent, about 3 minutes.
- Add the rinsed rice to the pot and stir to coat with butter and onions for 1 minute.
- For in the chicken broth and whole milk, stir well.
- Bring the mixture to a gentle boil, then reduce heat to low and simmer uncovered for 25 minutes, stirring occasionally to prevent sticking.
- Season the soup with a pinch of salt and ground black pepper.
- Once the rice is tender and the soup has thickened to a creamy consistency, remove from heat.
- Stir in the grated parmesan cheese until melted and combined.
- Serve the creamy rice soup hot, garnished with extra parmesan if desired.
