- 100 g shortcrust pastry sheet
- 80 g fresh cheese (ricotta)
- 50 ml whole milk
- 1 piece large egg
- 5 g fresh mint leaves chopped
- 15 g grated parmesan cheese
- 1 pinch salt
- 1 pinch black pepper ground
- 1 teaspoon olive oil

Instructions
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Roll out the shortcrust pastry sheet and place it into a small tart pan, pressing gently to fit the shape.
- Prick the base of the pastry with a fork to prevent bubbling during baking.
- Bake the pastry base in the preheated oven for 10 minutes until lightly golden, then remove and set aside.
- In a mixing bowl, whisk the large egg with the fresh cheese (ricotta) until smooth.
- Add the whole milk, grated parmesan cheese, chopped fresh mint leaves, salt, and ground black pepper to the bowl and mix well.
- For the cheese and mint mixture evenly over the pre-baked pastry base.
- Drizzle the teaspoon of olive oil over the top of the filling for added flavor and moisture.
- Return the quiche to the oven and bake for 25 to 30 minutes until the filling is set and the top is lightly golden.
- Remove the quiche from the oven and let it cool for 5 minutes before serving.
