- 100 g all purpose flour
- 50 g unsalted butter cold diced
- 30 ml cold water
- 80 g Maroilles cheese cut into small cubes
- 50 ml whole milk
- 1 piece large egg
- 1 pinch freshly ground black pepper pinch
- 1 pinch salt pinch

Instructions
- In a mixing bowl, combine 100 g all purpose flour and 50 g cold diced unsalted butter.
- Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
- Add 30 ml cold water and a pinch of salt to the mixture.
- Mix gently until the dough comes together into a ball, do not overwork.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
- Roll out the chilled dough on a lightly floured surface to fit a small tart pan.
- Place the dough into the tart pan and press it evenly into the bottom and sides.
- Prick the base of the dough with a fork to prevent bubbling during baking.
- Bake the tart shell for 12 minutes until lightly golden, then remove from oven.
- In a bowl, whisk 1 large egg with 50 ml whole milk, a pinch of salt, and freshly ground black pepper.
- Spread 80 g Maroilles cheese cubes evenly over the baked tart shell.
- For the egg and milk mixture over the cheese in the tart shell.
- Return the tart to the oven and bake for 20 minutes until the filling is set and golden.
- Remove from oven and let cool slightly before serving.
