- 100 g medium beet cooked peeled diced
- 50 g radish sliced thin
- 50 g cucumber peeled diced
- 150 ml plain yogurt whole milk
- 100 ml buttermilk
- 5 g fresh dill chopped
- 10 g green onion sliced
- 5 ml lemon juice fresh
- 1 pinch salt
- 1 pinch black pepper ground

- Wash and peel the cooked beet, then dice into small cubes.
- Wash and thinly slice the radishes.
- Peel and dice the cucumber into small pieces.
- In a mixing bowl, combine the plain whole milk yogurt and buttermilk.
- Add the diced beet, sliced radish, and diced cucumber to the yogurt mixture.
- Chop fresh dill finely and slice green onions thinly, then add both to the bowl.
- Add fresh lemon juice, a pinch of salt, and ground black pepper to the mixture.
- Stir all ingredients gently until well combined.
- Cover the bowl and refrigerate the soup for at least 1 hour to chill and allow flavors to blend.
- Serve the chilled soup in bowls, garnished with a sprig of dill if desired.
