- 1 piece medium zucchini
- 100 g cooked quinoa
- 80 g cooked green lentils
- 30 g red bell pepper diced
- 30 g yellow onion diced
- 1 piece garlic clove minced
- 1 tablespoon olive oil
- 1 tablespoon tomato paste
- 0.5 teaspoon dried oregano
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper ground
- 15 g grated parmesan cheese

Instructions
- Preheat oven to 190 degrees Celsius (375 degrees Fahrenheit).
- Wash the zucchini and cut in half lengthwise.
- Use a spoon to scoop out the seeds and some flesh to create boats, leaving about 1 cm thick walls.
- Place zucchini boats on a baking tray lined with parchment paper.
- Heat olive oil in a skillet over medium heat.
- Add diced onion and minced garlic to the skillet and cook until softened, about 3 minutes.
- Add diced red bell pepper and cook for 2 more minutes.
- Stir in cooked quinoa, cooked lentils, tomato paste, dried oregano, salt, and ground black pepper.
- Cook the mixture for 3 minutes, stirring occasionally, then remove from heat.
- Fill each zucchini boat evenly with the quinoa and lentil mixture.
- Sprinkle grated parmesan cheese on top of each stuffed zucchini.
- Bake in the preheated oven for 20 minutes or until zucchini is tender and cheese is golden.
- Remove from oven and let cool for 5 minutes before serving.
