  • 1 piece large egg
  • 1 pinch salt
  • 1 teaspoon orange blossom water
  • 15 g candied orange peel chopped
  • 5 g powdered sugar for dusting

  1. In a small bowl, dissolve fresh yeast in lukewarm whole milk and let it rest for 10 minutes until foamy.
  2. In a large mixing bowl, combine all purpose flour, granulated sugar, and salt.
  3. Make a well in the center of the dry ingredients and add the yeast mixture, large egg, and orange blossom water.
  4. Mix all ingredients until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  5. Add softened unsalted butter to the dough and continue kneading until fully incorporated and dough is shiny and elastic.
  6. Fold in chopped candied orange peel evenly into the dough.
  7. Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for 1 to 2 hours until doubled in size.
  8. Punch down the dough gently and shape it into a ring or oval shape to form the kings cake brioche.
  9. Place the shaped dough on a baking sheet lined with parchment paper, cover, and let it rise again for 45 minutes.
  10. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  11. Bake the brioche for 25 to 30 minutes until golden brown and cooked through.
  12. Remove from oven and let cool on a wire rack.
  13. Dust the cooled brioche with powdered sugar before serving.
