- 200 g skinless chicken breast
- 50 g fresh spinach leaves chopped
- 40 g artichoke hearts canned chopped
- 30 g cream cheese softened
- 20 g mozzarella cheese shredded
- 10 g parmesan cheese grated
- 1 piece garlic clove minced
- 1 tablespoon olive oil extra virgin
- 1 pinch salt
- 1 pinch black pepper ground

Instructions
- Preheat oven to 190 degrees Celsius (375 degrees Fahrenheit).
- Using a sharp knife, carefully cut a pocket into the side of the chicken breast without cutting all the way through.
- In a bowl, combine chopped fresh spinach, chopped canned artichoke hearts, softened cream cheese, shredded mozzarella cheese, grated parmesan cheese, and minced garlic clove. Mix well.
- Season the chicken breast inside and out with a pinch of salt and ground black pepper.
- Stuff the cheese and vegetable mixture into the pocket of the chicken breast, pressing gently to fill completely.
- Heat extra virgin olive oil in an oven-safe skillet over medium heat.
- Place the stuffed chicken breast in the skillet and sear for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and juices run clear.
- Remove from oven and let rest for 5 minutes before serving.
