  • 200 g skinless chicken breast
  • 50 g fresh spinach leaves chopped
  • 40 g artichoke hearts canned chopped
  • 30 g cream cheese softened
  • 20 g mozzarella cheese shredded
  • 10 g parmesan cheese grated
  • 1 piece garlic clove minced
  • 1 tablespoon olive oil extra virgin
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Preheat oven to 190 degrees Celsius (375 degrees Fahrenheit).
  2. Using a sharp knife, carefully cut a pocket into the side of the chicken breast without cutting all the way through.
  3. In a bowl, combine chopped fresh spinach, chopped canned artichoke hearts, softened cream cheese, shredded mozzarella cheese, grated parmesan cheese, and minced garlic clove. Mix well.
  4. Season the chicken breast inside and out with a pinch of salt and ground black pepper.
  5. Stuff the cheese and vegetable mixture into the pocket of the chicken breast, pressing gently to fill completely.
  6. Heat extra virgin olive oil in an oven-safe skillet over medium heat.
  7. Place the stuffed chicken breast in the skillet and sear for 3-4 minutes on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and juices run clear.
  9. Remove from oven and let rest for 5 minutes before serving.
