  • 10 ml vegetable oil
  • 50 g yellow onion thinly sliced
  • 5 g fresh flat leaf parsley chopped
  • 1 pinch salt
  • 1 pinch black pepper ground

  1. Peel the potatoes and slice them into 5 millimeter thick rounds.
  2. Rinse the potato slices under cold water to remove excess starch, then pat dry with a clean towel.
  3. Heat the vegetable oil and unsalted butter in a large nonstick skillet over medium heat until the butter is melted and foaming.
  4. Add the potato slices in a single layer without overlapping. Cook undisturbed for about 5 minutes until the bottoms are golden and crispy.
  5. Flip the potato slices carefully and cook the other side for another 5 minutes until golden and cooked through.
  6. Add the thinly sliced yellow onion to the skillet and stir gently to combine with the potatoes.
  7. Continue cooking for 3 to 4 minutes, stirring occasionally, until the onions are soft and lightly caramelized.
  8. Season the potatoes and onions with a pinch of salt and ground black pepper to taste.
  9. Remove the skillet from heat and sprinkle the chopped fresh flat leaf parsley over the potatoes.
