  • 200 g butternut squash peeled and diced
  • 100 g cooked white beans drained
  • 50 g yellow onion diced
  • 1 piece garlic clove minced
  • 300 ml vegetable broth low sodium
  • 10 g unsalted butter
  • 50 ml whole milk
  • 1 pinch ground black pepper
  • 1 pinch salt fine
  • 1 teaspoon fresh thyme leaves

  1. Peel the butternut squash, remove seeds, and dice into small cubes.
  2. Dice the yellow onion and mince the garlic clove.
  3. Heat the unsalted butter in a large pot over medium heat until melted.
  4. Add the diced onion to the pot and cook until translucent, about 5 minutes.
  5. Add the minced garlic and fresh thyme leaves, cook for 1 minute until fragrant.
  6. Add the diced butternut squash and cooked white beans to the pot, stir to combine.
  7. For in the vegetable broth and bring the mixture to a boil.
  8. Reduce heat to low and simmer for 20 minutes until the squash is tender.
  9. Remove the pot from heat and use an immersion blender to puree the soup until smooth.
  10. Return the pot to low heat, stir in the whole milk, and season with salt and ground black pepper to taste.
  11. Heat the soup gently for 5 minutes, do not boil after adding milk.
  12. Serve hot with optional crusty bread or fresh herbs for garnish.

  • Use fresh thyme for best flavor but dried thyme can be substituted if needed.
  • Do not overcook the soup after adding milk to prevent curdling.
